Ingredient
  • 6 each Bratwursts
  • 12 ounce (1 can) beer
  • 1 each Onion; med., chopped
  • 6 each Peppercorns
  • 4 each Cloves
  • 6 each Hard rolls
INSTRUCTIONS
Place bratwursts, beer, onion, peppercorns, and cloves in a 3-quart saucepan. Simmer for 20 minutes. Drain. Grill bratwursts 2 to 5 inches from charcoal about 10 minutes, until browned. Sprinkle with water to form a crisp skin. Serve in hard rolls with Dusseldorf-style mustard.The bratwurst sausage recipe is ready..great taste..! Enjoy !

Ingredient
  • 1 cup Fresh white bread crumbs
  • ½ cup Milk
  • 2½ pounds Lean veal, preferably shoulder, chilled
  • 2½ pounds Pork belly or fatty pork butt, chilled
  • 1 tablespoon Plus 2 tsp salt
  • 1 teaspoon Freshly ground white pepper
  • 1½ teaspoon Freshly ground nutmeg
  • 8 Yards prepared casings, about 4 oz.

INSTRUCTIONS
In a small bowl, soak the bread crumbs in the milk. Grind the veal and pork belly together, first coarsely and then finely. Place th meat in a large bowl. Add the salt, nutmeg, white pepper and softened bread crumbs. Mix well with your hands until thoroughly blended. Working with about one-quarter of sausage filling at a time (cover the rest and refrigerate the remainder). Stuff the casings loosely with the sausage filling. Pinch and twist into 4 inch links. Refrigerate the first ones
while doing the rest. To cook, prick the sausages all over to prevent the skins from bursting. Place as many sausages in a skillet as will fit in a single layer without crowding. Pour in about one-half inch of water, cover and simmer over low heat for 20 minutes. Pour off any liquid. Add butter to the pan and cook uncovered, turning, until the sausages are evenly browned. .about 10 minutes.

INGREDIENTS
  • 5 large Shallots
  • 1½ tablespoon Olive oil
  • 1 tablespoon Unsalted butter
  • 8 cup Chicken stock
  • 2 small Pippin or Granny Smith apple
  • ½ pounds Bratwurst
  • ⅓ Napa cabbage head
  • ½ teaspoon Caraway seeds
  • salt & pepper to taste
INSTRUCTIONS
1. Prepare ingredients: Peel and trim shallots and separate into sections. Peel apples, cut into eighths, and core. Cook bratwurst, halve lengthwise, and cut on the diagonal into 1/2-inch wide pieces. Halve napa cabbage and shred.
2. In a large, heavy-bottomed saucepan, cook shallots in oil and butter over moderately high heat, stirring frequently, until browned, about 7 to 8 minutes. Add 2 cups stock and cook until nearly all the liquid has evaporated, about 17 to 18 minutes.
3. Add apples and cook, stirring gently, for 1 minute. Add remaining 6 cups stock along with the bratwurst, cabbage and caraway seeds; cook until sausage is heated through and apples are tender, 7 to 8 minutes.

  • Sheboygan Brats; a couple of pounds
  • Beer to cover
  • 1 tablespoon Honey per 4 oz beer
  • Julienne Onions & Bell peppers
  • Buns (Hoagie buns; not those dinky little hot dog things)

The Method

Put the Brats in a pan and brown them on all sides. Pour of the rendered fat and pour on the beer and honey. Cover and simmer until the brats are fully cooked. now chill and grill. Grill until hot all the way through. Saute the onions and peppers and serve them on the brats along with German Mustard or Guldens. This bratwurst sausage in beer are ready to roll !

  • 1 can (12 oz) beer
  • 1 can (16 oz) sauerkraut; drained

INSTRUCTIONS
1. Combine bratwurst and beer in 2 -Quart Microwaveabel casserole, cover. Microwave at HIGH (100%) 5 minutes. Reduce power to MEDIUM-HIGH (70%). Microwave until internal temperature reaches 170 degrees, 17 to 20 minutes, stirring once. If using oven other than Carousel, stir 2 or 3 times.
2. Add sauerkraut: cover and let stand 5 minutes. Serve on buns.

  • 1 pounds Bratwurst cut into 1/2 inch Pieces
  • 1 cup Shredded cabbage
  • 2 tablespoon Shredded carrot
  • ⅓ cup German mustard

The Method
Combine all ingredients in glass bowl. Microwave on high 3 to 4 minutes, stirring once during cooking..and its ready to serve..!

4 cup Onions; Sliced
2 tablespoon Cooking Oil
2 tablespoon Water
4½ teaspoon Paprika
¼ teaspoon Ground Cumin; Optional
6 slice Bacon
6 Bratwurst; 2 lb

Combine the onion, oil, water, paprika and cumin, blending well. Place on a 20-inch length of heavy duty foil. Securely wrap the mixture into a loose packet and refrigerate. Wrap one bacon strip around each bratwurst, securing the bacon with wooden picks. Cover and refrigerate. TO GRILL: Cook the onion packet and bratwurst 4 inches from gray coals (medium heat), turning the bratwurst often. Grill for 20 to 25 minutes or until the onions are tender and the bratwurst are cooked through. To serve, place the bratwurst in the frankfurter buns and top with the onion mixture....nice..!

Ingredient
  • 3 Ft small hog casings (1-1/2-inch diameter)
  • 1½ lbs Lean pork butt, cubed
  • 1 lbs Veal, cubed
  • ½ lbs Pork fat, cubed
  • ¼ tsp Ground allspice
  • ½ tsp Crushed caraway seeds
  • ½ tsp Dried marjoram
  • 1 tsp Fresh ground white pepper
  • 1 tsp Salt, or to taste
The Method

1. Prepare the casings.
2. Grind the pork, veal, and pork fat separately through the fine blade of the grinder.
3. Mix the ground meats and grind again.
4. Add the remaining ingredients to the meat mixture and mix thoroughly.
5. Stuff the mixture into the casings and twist off into four- or five-inch lengths.
6. Refrigerate for up to two days. The bratwurst can be pan fired or grilled over charcoal.
