Bratwurst & Buns Recipe

Bratwurst Ingredient
  • 1 tablespoon olive oil
  • 2 cup sliced white onions
  • ¼ cup whole-grain mustard
  • 2 tablespoon molasses
  • 1 cup light stock
  • 2 pounds white bratwurst
  • 12 hot dog buns

Instructions
First of  all heat the oil in a large soup pot, add the onions and cook until brown and sweet, about 15 minutes. And then add the mustard, molasses, and stock, mix well. Next add the bratwurst, stirring to cover them with all the goodness. Simmer on medium for 20 minutes. Serve them up in a bun with a slaw and beans on the side....hmmm great taste..!

BRATWURST SAUSAGE INGREDIENTS
  • 1 to 2 lbs. bratwurst sausage
  • 4 med. potatoes
  • 2 med. carrots
  • 1 sm. onion
  • 1/2 head med. cabbage
BRATWURST SAUSAGE INSTRUCTIONS
First of all cook the bratwurst sausage, covered for 20 minutes; brown, drain. And then peel and quarter potatoes, carrots and onions. Cube cabbage. Next is to place potatoes, carrots and onion in large pot; cover with water. Layer cabbage and sausage on top. Cover and cook over medium heat for 30 minutes or until potatoes are cooked. Serves 4.persons. Enjoy it !

BRATWURST SAUSAGE RECIPE INGREDIENTS
  • 1 c. unsifted plain flour
  • 1/2 c. butter
  • 1/2 c. sm. curd creamed cottage cheese
  • 6 (5 inch) pre-cooked Polish or bratwurst sausage
  • 1 tbsp. mustard
  • 1 egg
  • 1 tbsp. milk
BRATWURST SAUSAGE RECIPE INSTRUCTIONS
Put flour into mixing bowl and cut butter into 1/2-inch pieces and cut into flour until mixture is pea-size pieces. Stir in cottage cheese until dough is stiff. Add 2 or 3 teaspoons of water if needed.

Divide into 6 parts and roll each part to make a rectangle 6 inches long and 3 inches wide. Spread on 1 teaspoon mustard and top with a sausage. Roll seam side down and place on cookie sheet. Prick with a fork.

Mix egg and milk and brush each roll. Bake at 400 degrees for 20-25 minutes or until brown. Slice each roll into 1-inch pieces. Serve with cocktail picks.

Makes 30 rolls. Enjoy the bratwurst.

BRATWURST SAUSAGE RECIPE INGREDIENTS
  • 1-1 1/2 lb. Polish sausage, bratwurst or franks
  • 2 strips bacon, diced
  • 1 med. onion, chopped
  • 1 med. golden delicious apple, cored & diced
  • 1 tbsp. brown sugar
  • 1 tbsp. dry sherry
  • 1/2 tsp. caraway seeds
  • 1/2 c. chicken broth
  • 1 lb. 11 oz. sauerkraut, drained well
BRATWURST SAUSAGE RECIPE INSTRUCTIONS
Cut 1/4 inch deep slashes at 1 inch intervals in bratwurst sausage. In wide frying pan over medium heat, cook bacon and onion, stirring until onion is soft. Stir in sauerkraut, apple, sugar, sherry, caraway and broth. Cook, stirring for 20 minutes. Arrange sausages on top. Cover. Reduce heat and simmer until sausages are heated through and apple is fork tender (20-25 minutes). Garnish with parsley. Serves 4-6.

Bratwurst Sausage Recipe Ingredients:
  • 4 feet small (1 1/2 inch diameter) hog casings
  • 2 pounds Lean pork butt, cubed
  • 1 1/2 pound Veal, cubed
  • 1/2 pound Pork fat, cubed
  • 1/4 teaspoon Ground allspice
  • 1/2 teaspoon Crushed caraway seeds
  • 1/2 teaspoon Dried marjoram
  • 1 tablespoon Ground cayenne pepper
  • 1 tablespoon Freshly ground white pepper
  • 1 tablespoon Salt, or to taste
Bratwurst Sausage Recipe Instructions:

Prepare the casings. Soak the casing about an hour in cold water to soften it and to loosen the salt in which it is packed. Cut into 3 foot lengths, then place the narrow end of the sausage stuffer in one end of the casing. Place the wide end of the stuffer up against the sink faucet and run cold
water through the inside of the casing to remove any salt. Roll up the casing you do not intend to use; put about 2 inches of coarse salt in a large jar, place the rolled up casing on it, then fill the rest of the jar with salt. Close tightly and refrigerate for later use.

Grind the pork, veal, and pork fat separately through the fine blade of the grinder. Mix the ground meats and grind again. Add the remaining ingredients to the meat mixture and mix
thoroughly. Stuff the mixture into the casings and twist off into six inch lengths. Refrigerate for up to two days or freeze. The bratwurst can be pan fried or grilled. Yield: 3 1/2 lbs.

* 2 lbs ground deer meat (ground)
* 2 lbs pork butt (ground)
* 1 large onion, minced
* 1/2 teaspoon sugar
* 2 1/2 teaspoons salt
* 1 teaspoon ground allspice
* 1 teaspoon caraway seed
* 1/2 teaspoon ground sage
* 1 teaspoon marjoram
* 1 teaspoon pepper
* 2/3 cup milk
* casing, soaked in water for two hours and rinsed thoroughly (place casing end over tap and letting water run through)

Bratwurst Sausage Recipes Instructions

1.Mix ingredients thoroughly and place meat mixture into food grinder gradually (This is better if you have two people).
2.Place casing end over stuffing tube and hold.
3.Turn grinder on and when casing starts to fill with air, stop machine and squeeze air out.
4.Tie end off.
5.Push meat thru steadily, filling casing.
6.Let sausage coil as you fill.
7.Gently pinch casing and twist 3-4 times.
8.Grill or simmer 20-30 minutes until well done.

BRATWURST SAUSAGE INGREDIENTS
  • 3 lbs. sauerkraut, rinsed & well drained
  • 1/2 lb. thickly sliced bacon
  • 4 pork sausages
  • 4 bratwurst sausage or knockwurst
  • 4 frankfurters
  • 8 pork chops
  • 1 lb. smoked ham, cut in pieces
  • 2 c. white wine
  • 3 whole onions, peeled & stuffed with 3 cloves
  • Salt & pepper
  • Water
  • 1 tbsp. black peppercorns
BRATWURST SAUSAGE INSTRUCTIONS
Place sauerkraut in large pan; add peppercorns, onions and white wine, cover and simmer 15 minutes. Saute bacon until crisp; drain. Brown all bratwurst sausage in hot fat; drain. Brown pork chops and ham in same skillet. Place a layer of sauerkraut over 2 slices bacon; lay half of sausages, two more slices bacon and meats. Cover with a layer of sauerkraut and repeat the process. Cover tightly and simmer 3 hours (pour 1 cup of water during cooking, if necessary). Season to taste with salt and pepper. The bratwurst sausage recipe is ready to serve with boiled potatoes...nice ! enjoy !
